Paul Kapner Cec’s Expertise I am the Director and Executive Chef for the Food Service Training Academy. We are part of the Community FoodBank of New Jersey. The Training Academy is a 16 week all hands on culinary training program located in a 5000 sq ft commercial kitchen. The program is geared to low income people and for people that need a second chance in life. In the 16 weeks our students learn knife skills, measurements, meat, fish and poultry identification and fabrication. The students also learn professionalism and learn what it takes to work in the food industry. During training, the kitchen produces 12000-15000 meals weekly. Upon graduation our students also are trained and certified in ServSafe. Our graduates go on to be quality cooks within the food service profession. Our kitchen has been designated during a national disaster to be producing meals for those people in need. Our kitchen can run 24/7 if needed.
